Ripe Williams pear and cognac, in a bottle shaped like the fruit itself. Perfumed, gently sweet, and one of the most recognizable liqueurs on any back bar.

Jean-Louis Brillet created it in 1985 at his family's cognac house and named it for his wife, Isabelle. It takes the equivalent of eighteen Williams pears to fill a 700ml bottle, the pear spirit blended with Brillet cognac, water and Madagascar vanilla sugar, with no coloring or other additives. Expect poached pear and honey over a warm cognac base. Pour it over ice as an aperitif or digestif, top it with champagne, or use it to lift a sour.
