They are then carried to south-west France, a passage Planteray calls dynamic aging, after the old practice of maturing rum aboard ship. The last stage is continental: used oak barrels and up to three years of open-air oxygenation in large wooden vats, in cellars beside the river Antenne in Cognac country. The result is dark and generous, with dried fruit, orange peel, chocolate and vanilla giving way to plum and caramel, and a palate rich in smoked molasses with a smooth, warm, lingering sweetness.\u003c\/p\u003e\u003cp\u003eAt navy strength it takes water gladly, and it has the weight to stand up to citrus and sugar.
